Healthy Banana Blueberry & Lemon Ice Cream

This recipe requires very ripe bananas – which tend to be sweeter than the green-tinged ones because the sugars concentrate as they age. This ice cream is paired with a gentle swirl of fresh blueberries, which will surely satisfy your sweet tooth naturally. These healthy fruits block fat cell formation and help prevent cancer, diabetes and age-related memory issues.

Healthy Banana Blueberry & Lemon Ice Cream


6 ripe bananas
1 tablespoon vanilla extract
½ cup honey
zest of four lemons
¼ cup virgin coconut oil, melted or you can use refined oil if you want no coconut flavor
1 cup blueberries
1 pinch of salt as per your taste

Preparation Method

Put the bananas, vanilla, lemon, honey, and salt in a blender and blend until the mixture is smooth. If you’re making this in a food processor, process the bananas first.
Pour in the melted coconut oil.
Freeze in an ice cream machine according to the manufacturers instructions. This does not freeze as hard as regular ice cream, but still it will be as much enjoyable as regular ice cream. Stir in the blueberries and spread into a storage container. Freeze for minimum four hours before serving it cold.
